Why can you just try and modify the code? The board will not explode.....
Anyway if you like to read one channel only, change the subroutine to read channel 0, no more parameter needed when calling this subroutine....

Part A is actually 2 sub-functions. 1st function is to make the LCD clear. 2nd function is to send a string to LCD. sending string is actually sending character one by one. This function used pointer to point to string. Just compile the code using PICC Lite like any DIY project will convert this code to machine code, if that is what you need.
Part B is another sub-function that return ADC result base on channel wanted. CHS is actually the channel select bit, these 3 bit will control the channel connected to ADC module on PIC. please refer to data sheet of PIC16F877A, find ADCON0.

Thank you, robosang, for your comment.. im already check the resistance coil..that unipolar..im not going to use bipolar because require transistor to drive it..

Azka, I have one of this stepper motor long time ago, but is not from Cytron, get it from some place in pasar road. I cannot remember the model name, but it look the same with what Cytron have. and is unipolar, of course you can drive it using bipolar method. Is good to have unipolar stepper motor where you can drive it unipolar or bipolar. Good luck to your project!
